I have created another gem of a recipe!
This vegetable chili blew my mind.
It is just too good for its own good. :)
It really does resemble "real" chili (minus all of the bad ingredients)!
*Great for all of your sporting events- including for the Super Bowl this weekend!*

Ingredients:
*3-4 medium sized organic beefsteak tomatoes
*2 dates
*Organic corn
*One package organic sundried tomatoes
*Quarter of organic orange bell pepper
*Quarter of organic red bell pepper
*Green onions (optional)
*Organic ground Cumin
*Organic ground cayenne pepper

Use fresh corn if possible. If fresh is not available use frozen corn. Place it in a large bowl and set aside. |

Chop up two-three tomatoes and place in food processor with sundried tomatoes, 2 dates, 1 tablespoon cumin and as much cayenne as you desire. You can mandate the spiciness. I used around a teaspoon. |
