Vegetable Corn Chili + Important Video to Watch






               I have created another gem of a recipe! 


                     This vegetable chili blew my mind. 

                   It is just too good for its own good. :)




            It really does resemble "real" chili (minus all of the bad ingredients)! 




*Great for all of your sporting events- including for the Super Bowl this weekend!*

Ingredients:
*3-4 medium sized organic beefsteak tomatoes
*2 dates
*Organic corn
*One package organic sundried tomatoes
*Quarter of organic orange bell pepper
*Quarter of organic red bell pepper
*Green onions (optional)
*Organic ground Cumin
*Organic ground cayenne pepper

Use fresh corn if possible. If fresh is not available use frozen corn. Place it in a large bowl and set aside. 

Chop up two-three tomatoes and place in food processor with sundried tomatoes, 2 dates,  1 tablespoon cumin and as much cayenne as you desire.
You can mandate the spiciness. I used around a teaspoon.

                                          These are my two favorite spices at the moment!

You can use sundried tomatoes that are oil/salt free or use your own (check out my previous post about making your own sundried tomatoes)!



Blend up the mixture until it looks like this.



Pour on top of corn.


Chop up the bell peppers very finely.  
Aren't they beauties?




The finer you chop the peppers the better for this recipe. 




Also chop up the rest of the tomatoes.
Place all ingredients in large bowl and stir.



You're done! 




Enjoy on pieces of romaine lettuce or stir into a large bowl of greens. 
--> You can also put a few more dashes of cumin and cayenne on top for added flavor.
