Raw Vegan Spaghetti Salad!


 

 

Spaghetti and salad- who knew this combination could be so good?

 

 





 

 

To create this recipe you'll need:

 

 

-2 small romaine bundles

-3 medium zucchinis

-2 containers salt/oil free sundried tomatoes

-1 beefsteak tomato

-1/2 red pepper

-1 tablespoon dried basil

-1 tablespoon dried oregano

-Couple dashes paprika

-5 or so dashes cayenne  

 

 

 

I typically chiffonade my romaine because it just creates a better mouthfeel. 

Spiralize your zucchinis. I made my noodles pretty big.


Lay the noodles on top of the romaine in a large bowl.

 

 

For the spaghetti sauce:




Take your tomato, sundried tomatoes, bell pepper, and spices and blend in food processor.


The consistency should be very chunky.



Now all you have to do is stir it in the salad & you're done!










 

Now that is delicious!    :)
