It's my birthday today!
So, in the name of celebration I decided to make these carrot cake hearts.
They are easy and present fabulously I might add!
*These would also be fabulous for the upcoming Valentine's Day holiday!*

Ingredients:
- 15 dates
- 3 large carrots (to make 4 cups shredded carrots)
- 1 cup organic raw pecans
- 1 1/2 teaspoon organic cinnamon
- 1/2 teaspoon organic turmeric
- sliver of organic ginger

| With your shredder blade attached, food process 3 large carrots until you get around 4 cups worth. |

| Place in a separate bowl. |
 |
| Take out the shredder blade and attach the S blade. Add all ingredients listed above and blend. |
 |
| Take a large square of the mixture and place onto a cutting board. Use a heart cookie cutter or any other shape and voila! |
 |
| Using a flat utensil or spatula, remove and put onto a plate. |
 |
| You can also add a pecan as a garnish. |
 |
If you do not have any cookie cutters, you can simply roll into a ball and add a pecan to the top!
